Biography

I am a data scientist interested in the theory and science of cane spirits. I use cane spirits to refer to any form of distilled alcoholic beverage derived from sugarcane or its byproducts. This can conclude molasses, cane juice, or brown sugar intermediates like jaggery or the namesake of our website, kokutō.

The name clouds of kokutō was chosen to invoke the elegant, dream-like imagery of condensates of cane juices.
